it's a bit more complicated than that... you could always use the default grayscale conversion in any software but the converted image usually lacks contrast and are usually dull. i convert them in photoshop via Image > Adjustments > Channel Mixer in monochrome mode and manually adjust the contrast via the RGB sliders. Hope it makes sense. :)
